Grilled Lamb Chops with Vino Nobile Super Tuscan Reduction

Ingredients:

  • 4 lamb chops

  • 2 tsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp fresh rosemary, chopped

  • Salt and freshly ground black pepper to taste

  • 1/2 cup 2019 Vino Nobile Super Tuscan, Three Hills Winery

  • 1/4 cup balsamic vinegar

  • 1 tbsp honey

  • 1 tbsp unsalted butter

Instructions:

  1. Marinate Lamb Chops: In a bowl, mix olive oil, garlic, rosemary, salt, and pepper. Coat the lamb chops and let them marinate for at least 1 hour in the refrigerator.

  2. Prepare Reduction: In a saucepan, combine the Vino Nobile Super Tuscan wine, balsamic vinegar, and honey. Simmer over medium heat until reduced by half, stirring occasionally. Whisk in the butter until the sauce thickens slightly. Season with salt and pepper.

  3. Grill the Lamb: Preheat the grill to medium-high heat. Grill the lamb chops to your desired doneness, about 3-4 minutes per side for medium-rare.

  4. Serve: Arrange the lamb chops on plates, drizzle with the Vino Nobile reduction, and garnish with a sprig of rosemary.
